The traditional balsamic vinegar of Modena is a product of high gastronomy that meets the criteria of AOP certification (DOP in Italy). The elaboration of this balsamic vinegar meets the standards of specifications supervised by the Vinegar Consortium to obtain exceptional quality.

 

The Traditional Balsamic Vinegar of Modena D.O.P., AFFINATO, over 12 years of ageing is obtained by cooking, fermenting and ageing only cooked grape must, without the addition of any other ingredient. Verify the originality of the product by checking the presence of the European logo D.O.P. red and yellow and the seal of the consortium.

The traditional balsamic vinegar of Modena is extracted from the best Modena grapes. The "Affinato" vinegar comes from a method of ageing in barrels according to Malpighi's know-how, and it has a full-bodied and robust flavour with woody veins, resulting in a harmonious aroma and a balanced density.

 100% cooked grape must from Lambrusco & Trebbiano grapes

  • 4/10th of strawberry juice,
  • 4/10ths of tangerine juice,
  • 5 drops of liquid sugar.
